Roasted Broccoli With Garlic & Ginger

1 ½ pounds broccoli, cut into long spears 2 Tbl extra-virgin olive oil 1 Tbl minced garlic 1 tsp finely chopped fresh ginger ½ tsp kosher salt ½ tsp crushed red pepper Lemon wedges, for serving Preheat the oven to 450°. In a large bowl, toss the broccoli with the olive oil, garlic, ginger, salt and crushed red pepper. Spread the broccoli on a rimmed baking sheet and roast in the upper third of the oven for about 20 minutes, stirring occasionally, until crisp-tender and browned in spots. Serve with lemon wedges. Oatmeal Pancakes

Best served with fresh fruit and pure maple syrup, these pancakes will wow them at the breakfast table, and keep you running all morning… 2 cups rolled oats (NOT quick/instant oats) 1 ¾ milk (non-fat, low-fat, almond, rice or soy) ¼ cup orange juice (freshly-squeezed if you’ve got it) 2 eggs, lightly beaten 4 Tbl. butter or soy margarine (soy margarine can be found at Trader Joe’s) ½ cup unbleached or whole-wheat flour 1 Tbl. sugar 2 tsp. freshly grated orange zest 1 tsp. baking powder 1 tsp. baking soda 1 tsp. cinnamon pinch nutmeg pinch salt 1 cup finely diced fresh peaches, apples, pears, strawberries or blueberries walnut oil for brushing the griddle In a large bowl, combine the oats, milk, and orange juice. Set aside for 15 minutes. Add the eggs and melted butter or margarine and beat about 30 seconds to combine well. Add the flour, sugar, orange zest, baking powder, baking soda, cinnamon, nutmeg, and salt; stir to mix well. Gently fold in the fruit. Heat a nonstick griddle or skillet over medium heat. Brush lightly with walnut oil. Pour the batter in 1/a cupfuls onto the heated grill, leaving space in between for turning. Cook until golden brown (air holes will start to form), about 2 minutes, then flip gently and cook the other side until golden brown, about 2 minutes. Green Smoothie Recipe

An amazing way to start the day, especially considering that most of us have trouble getting all of our recommended daily servings of vegetables, and raw veggies contain more nutrients than cooked. This is not a sweet smoothie, so be warned, but it’s filling and so SO good for you. Plus, it keeps for several hours, so it’ll make enough for a mid-morning snack as well… In a powerful blender (a vitamix is best, but any will do as long as you pre-chop some of the harder veggies): Fill 1/3 with raw greens [kale, chard, carrot greens, collard greens, beet greens, mustard greens, a little argula (it’s spicy so you don’t need much), broccoli, broccolini, brussels sprouts, carrots, cucumbers, whatever you’ve got in the fridge] Add 2 servings of low-acidic fruit [apples, pears, mango, berries, kiwi, banana, pineapple, papaya, nectarines, peaches]. No citrus or melon. Add ½ to a whole peeled avocado for texture and good fats. Add ¼ cup of flaxseeds, hemp seeds, soaked raw nuts [almonds, cashews, brazil nuts, hazelnuts, etc., soaked in water for 8 hours to reduce their acidity) Then add water to the desired consistency (I like it to about 2/3 up the pitcher). Study Says: Weight Not Necessarily an Indicator of Health

I recently read a great article on the Our Bodies Our Blog.org about how weight is not always an indication of health. Also disputes the validity of the BMI as an accurate measure of health. The article quotes MaryFran Sowers as saying of the BMI, "the system would put nearly half of NBA players in the overweight category."

Give Your Blueberries a Hot Bath, They’ll Last Longer

A few weeks ago I became aware of a New York Times article by Harold McGee titled Prolonging the Life of Berries. The article outlined a way to make berries last longer by giving them a hot bath. Since a good amount of my grocery bill goes toward berries, and I often throw away as many berries as I eat, I'm all for doing something to make them last longer. So, I followed the directions and documented the process. Let's see how long my berries will last this time. To start, spread all the berries out on a towel or paper towel:

Then, heat up some water to 140 degrees (there are different instructions for strawberries, raspberries and blackberries in the original article by Harold McGee.)

I used a thermometer to test the water.

. . . Keep the berries in hot water for 30 seconds then take them out and lay them on the towel again, then put them in the refrigerator.

Notice how the berries lose their white waxy covering after the hot bath? According to Harold McGee's article, this is to be expected. Ideally, your berries will last longer which means you save time and money and get to enjoy eating more berries than usual.
